Red cabbage and apple slaw

Ingredients

1/2 cup distilled white vinegar
-
1/4 cup low-fat plain Greek yogurt
-
1 teaspoon cider vinegar
-
1 teaspoon maple syrup
-
1/8 teaspoon salt
-
1/8 teaspoon black pepper
-
1/2 hear of red cabbage
-
1/2 Granny Smith applce, sliced into matchsticks
-
1 small shallot, thinly sliced

1/3 cup chopped walnut pieces, toasted
 

Instructions

1 - Place a bowl of ice water. Fill a large saucepan with water. Add the distilled vinegar and bring the water to a boil.
2 - While the water is coming to a boil, prepare the dressing. In a small bowl, combine the yougrt, cider vinegar, maple syrup, salt and pepper. Whisk together until blended. Set aside.
3 - Fit a food processor with its slicing disk. Cut the cabbage into wedges and push the wedges down the feeder tube to shred it. Add the cabbage to the boiling water and cook for 10 seconds. Drain and immediately plunge the cabbage into the ice water to stop the cooking. Drain thoroughly, and transfer the cabbage to a large bowl.
4 - Add teh apple, shallot, and walnuts. Pour the dressing over the slaw, and toss to coat. Refrigerate for 1 hour before serving.
