1/2 c kumquats, washed and sliced into thin rounds, seeds removed
1 small bunch radishes, sliced to thin rounds
2 avocados, cut to chunks and sprinkled with lemon juice
3 persian cucumbers, washed and quartered, cut to 1/2 inch pieces
1 c basil leaves, cut to chiffonade
1/2 c toasted slivered almonds
1 c feta cheese, crumbled
1/8 c lemon juice
1/4 c balsamic vinegar
1/8 c olive oil
1T dijon mustard
1 tsp. salt
1/2 tsp. pepper
1/8 tsp. cayenne
In small container with tight fitting lid, combine lemon juice,
balsamic vinegar, olive oil, dijon mustard, honey, salt, pepper and
cayenne. Shake vigorously to form vinaigrette.
In large salad bowl, combine greens, cucumbers, radishes, corn,
kumquats, basil and avocado. Pour vinaigrette over salad and toss to
evenly coat and distribute ingredients. Sprinkle with crumbled feta
and toasted almonds.
