     Strawberry Shortcake

2 cups flour
1/4 cup sugar
1/2 tsp. salt (a bit less if using salted butter)
4 tsp. baking powder
8 Tbs. cold butter (1 stick)
1 egg
2/3 c. milk (whole milk is best)

Preheat oven to 450. Grease a 10 inch skillet (you may use a pie plate instead).
Combine dry ingredients. Using 2 knives or a pastry bender, work cold butter into dry mix until the consistency small peas (may be finer-like coarse cornmeal).
Add egg to milk and mix. Add to flour mixture and toss until dough follows spoon (do not over mix).
Spoon into skillet in large dollops (it's fine if there are small spaces between). Bake about 20 minutes - but check after 15. Test with pasta - done when it comes out clean. Cool 5 minutes, then remover from pan to cool completely.
