     Crockpot Peanut Chicken MMK

8 chicken thighs, skin removed (2 pounds)
3/4 cup chunky salsa, choose your heat
1/4 cup peanut butter
2 tblsp lime juice
1 tblsp soy sauce
1 tsp grated gingerroot (or jarred ginger)
1/4 cup chopped peanuts
2 tblsp chopped cilantro (or sliced green onion)

Place chicken in crockpot. Mix remaining ingredients except chopped peanuts and cilantro. Spoon over chicken. Cover and cook on low 3 to 4 hours. Remove chicken from cooker, place on serving platter. Remove sauce, skim fat, pour sauce over chicken. Sprinkle with peanuts and cilantro or green onions.
NOTE- I doubled the sauce. Check 1/2 through cooking time to see if you need to add water...sauce is very thick. I like peanut sauce that is slightly sweet, so I added a spoonful of sugar to the sauce. Next time I will use chicken breasts instead of thighs.
NOTE- Serve with rice that has been cooked in canned coconut milk instead of water. Add a crunchy, cold dish to compliment flavors and texture. (also good with just plain spaghetti)
