     Coconut Carrot Cake

2 cup sugar
1 1/2 cup oil
4 eggs
2 cup sifted flour
2 tsp soda
2 tsp cinnamon
1 tsp salt
2 cup chopped carrots (mashed, cooked carrots ok)
1 cup crushed pineapple
3/4 cup chopped pecans
1/2 cup shredded coconut

Combine sugar, oil and eggs; beat well. Add combined dry ingredients; mix well. Stir in remaining ingredients and mix well.
Pour into greased and floured 9 x 13 inch pan. Bake at 350 degrees for 55 minutes. Cool.
Frost with following- 4 oz cream cheese 2 1/2 cup sifted powdered sugar 1/4 cup margarine 1 tsp vanilla 1/2 cup coconut 1/4 cup chopped pecans
Thoroughly blend cheese, sugar, oleo and vanilla; add remaining ingredients; mix thoroughly and spread on cooled cake.
