     Banana Coconut Custard

Ingredients
1 quart low-fat milk
6 eggs, beaten
1/2 cup honey
2 tsp vanilla
2 ripe bananas, should still be firm
2/3 cup shredded, unsweetened coconut
 

Instructions
Heat milk slightly and stir into beaten eggs with honey.
Cook over low heat, stirring until thickened. Do not boil. When thickened, stir in vanilla and set aside to cool slightly.
Slice 1/2 banana in bottom of each dessert dish. Pour custard over bananas.
Toast coconut in heavy bottom frying pan or in the oven until golden brown. Sprinkle over each dish and chill.
