1 quart low-fat milk
|
|
6 eggs, beaten
|
|
1/2 cup honey
|
|
2 tsp vanilla
|
|
2 ripe bananas, should still be firm
|
|
2/3 cup shredded, unsweetened coconut
|

Instructions |
|
|
Heat milk slightly and stir into beaten eggs with honey.
|
|
|
Cook over low heat, stirring until thickened. Do not boil. When thickened, stir in vanilla and set aside to cool slightly.
|
|
|
Slice 1/2 banana in bottom of each dessert dish. Pour custard over bananas.
|
|
|
Toast coconut in heavy bottom frying pan or in the oven until golden brown.
Sprinkle over each dish and chill.
