     Pumpkin Roll

Ingredients
3 eggs
2/3 cup pumpkin
1 tsp lemon juice
1 tsp baking powder
1 tsp ginger
1 cup sugar
3/4 cup flour
2 tsp cinnamon
1/2 tsp nutmeg
 
1/2 tsp salt
nuts (optional)
powdered sugar
Filling-
4 tbsp soft margarine
1 (8 oz) cream cheese
1 cup powdered sugar
2 tsp vanilla

Instructions
Beat eggs for 5 minutes. Add sugar; stir in lemon juice and pumpkin. Add dry ingredients and fold into mixture. Spread onto greased and floured jellyroll pan. Top with nuts (optional). Bake at 375 for 15 minutes. Turn onto powdered sugar towel; roll and cool completely. Unroll and spread with filling, re-roll and refrigerate.
