wash sweet potatoes under running water. Then, peel and cut into chunks about 1/2 inch to 1 inch square.
put the chunks into a big glass bowl,and then microwave for about 5-15 minutes, 5 minutes at a time, testing and stirring in between each 5 minutes,when it gets to be fork tender,or when a fork can pierce a chunk easily,take it out and mash it.
Dish out individual servings and let everyone add their own butter and cinnamon.this way,if they are vegan, or Gluten free and casein free,like my sister is, they can use the butter that will not make them sick or affect their diet.
