     Oven baked red snapper with sun dried tomatoes

Ingredients
Whole red snapper, gutted and scaled
5 sundried tomatoes
a third block of butter
flesh of half preserved lemons
one large onion chopped in rings
rosemary (enough to put in fish cavity)
5 cloves of garlic (smoked preferable) finely chopped
several leaves of lemon basil
 

Instructions
Turn on the oven to 170C. Melt the butter in low to medium heat, and add the garlic, lemon and chooped sundried tomatoes. Gently cook until garlic is slightly brown.
In an oven pan, very lightly oil the bas and place the onion rings as a base for the fish.
Brush both sides of the fish with the butter. Then place the fish on the onions. Stuff the cavity with the rosemary. Then pour all the remaining butter on the fish. place the basil leaves evenly spaced on the fish.
Place fish in the oven. About 15mins per inch of thickness.
