As best you can, use a long narrow knife to gut each jalapeno from the top, leaving a hole. pinch some cream cheese, shape it into a thin cylinder and roll it in the grated cheese. Then push the cheese into the pepper. Stuff all the peppers
Make the batter which is slightly more flour to soda ratio. So, 1.25 cup flour to 1 cup soda. Mix the batter well (season if you like).
Dip each pepper into the batter , shake off excess and shallow/deep fry until golden.
