     Hamburger Vegetable Soup

Ingredients
3 lbs. Hamburger
2 qt. Water
64 oz. can V8 Juice
16 oz. can diced Tomatoes w/ Basil
4 cans Mixed Vegetables
Barley
Beef Boullion
1 medium Onion
3 stalks of Celery
 
SEASONINGS
1 tsp. Salt
1 tsp. Pepper
1 tsp. Basil
1 tsp. Thyme
1 Bay Leaf

Instructions
Brown Hamburger with 1/2 onion (in rings and remove once meat browned), drain. Add boullion, water, celery, 1/2 onion (finely chopped), tomatoes, juice, seasonings and veggies. Simmer 2-4 hours.
Cook barley separately according to directions on package. Add to soup just minutes before serving.
Optional- Slice beef summer sausage. Heat in skillet w/ 1 T Olive Oil. Add to soup before serving.
