     Fried Chicken

Ingredients
2 cut up fryer Chickens
1 qt. plus 1/4 cup Buttermilk
5 cups All Purpose Flour
3 T Seasoned Salt
2 T Black Pepper
2 tsp. dried Thyme
2 tsp. Paprika
1 tsp. Cayenne Pepper
1/4 cup Milk
 
Canola or Vegetable Oil for frying

Instructions
Rinse chicken and cover all pieces with qt. of buttermilk and soak in the fridge over night. Let set out 30 minutes prior to frying.
Preheat oven 350 degrees. Place flour, seasoned salt, pepper, thyme, paprika and cayenne in a very large bowl. Stir together well. In small bowl combine 1/4 cup buttermilk and the milk. Pour milk mixture into the flourand with pastry cutter or fork, gradually mix until there are little lumps throughout.
Heat 1 1/2 inches of oil in deep skillet or Dutch oven over medium high heat until thermometer reaches 365 degrees. Working in batches, coat each buttermilk soaked chicken piece with the breading, pressing extra breading onto the chicken if necessary. Place breaded pieces on a plate.
Add chicken to oil 3-4 pieces at a time. Cover and fry 5-7 minutes. Checking occasionally to make sure not getting too brown. Turn pieces over and cook 3-5 minutes more. Place chicken on baking sheet and continue frying rest of chicken. When all chicken has been fried, bake the chicken for 15 minutes to finish cooking process.
