     Steak Fajitas

Ingredients
1 lb. Flank or Skirt Steak
1 lg. Yellow Onion, peeled, sliced w/ grain
2 lg. Bell Peppers, stemmed, seeded, ribbed, sliced
 
MARINADE
Juice of 1 Lime
2 T Olive Oil
2 cloves Garlic
1/2 tsp. ground Cumin
1/2 fresh jalapeno, seeded, ribbed, finely chopped
1/4 cup chopped fresh cilantro, including stems

Instructions
Mix marinade together. Add steak and let set least one hour.
Heat to high heat large cast iron skillet. Add 1 tsp. olive oil. Add steak, fry each side 3 minutes. Remove from pan. Let sit 5 minutes.
Reduce heat to medium high. Add little more oil. Add onions and peppers. Cook, stirring frequently, 5 minutes or until onions slightly translucent.
Slice meat against grain thin slices. Serve with shredded cheese, salsa, shredded lettuce, sour cream, guacamole, beans, corn, on warm tortillas.
