     Chocolate Cupcakes w/ Choc. Ganache

Ingredients
1/4 lb. Butter, softened
1 cup Sugar
4 Eggs
11 oz. Choc. Syrup
1 T Vanilla
1 cup All Purpose Flour
1 tsp. Instant Coffee
 
GANACHE
1/2 cup Heavy Cream
8 oz. Semi Sweet Choc. Chips
1 tsp. Instant Coffee

Instructions
Line muffin tins and preheat oven 325 degrees.
Cream butter & sugar until fluffy. Add eggs, Mix in choc. syrup and vanilla. Add flour and coffee and mix just till combined.
Bake for 30 minutes.
Ganache- Cook heavy cream, choc. chips and coffee in double boiler over simmering water until smooth. Dip top of each cupcake in ganache.
