     Super easy moroccon lemon chicken

Ingredients
An eight of a preserved lemon
3 sun driend tomatos
2 large tablespoons of sweet mango pickle (or jam)
half a chicken cut in pieces
2 large onions
6 cloves garlic
 

Instructions
Cut the onion into half rings, chop the garlic and place in a lightly oiled pot or tagine. Cook until soft.
Clean the chicken and pat dry. Mix with chopped lemon, sun dried tomato & mango/jam. Place on the cooked onions. Add half a cup of water.
Close the lid and cook on very very low fire for 1.5 to 2 hours.
