     Flourless Chocolate Cupcakes

Ingredients
8 oz. Bittersweet Chocolate
1 Stick Butter
1 Cup Heavy Cream
4 Large Eggs at room temp.
1 1/2 Cup Sugar
1/2 Cup Mayo
1/2 Cup Cornstarch
1/2 tsp. Cinnamon
1/2 tsp. salt
 

Instructions
Line 12 muffin pan with liners and spray them. Save 5 oz. of chocolate & put into a bowl. Cut remaining 3 oz. into 1/2 inch pieces, set aside. Combine butter and cream in pan over med-high heat. When cream mixture comes to a simmer, pour it over shaved chocolate & gently stir.
In Bowl, whisk together eggs, sugar, mayo, cornstarch, cinnamon & salt just until sugar dissolves. Pour chocolate mixture into egg mixture & gently mix. (do not over mix) Scoop 1/4 cup into each liner.
Bake until toothpick in center comes out clean 40-45 min. Do not over bake. Immediately add a chunk of the remaining chocolate through the top of each cupcake. Cool the pan on a rack for 10 min. then unmold. Dust with powdered sugar and serve warm.
