2- 10 oz. pkgs. frozen spinach, thawed and sqeezed dry
2 cups herb stuffing mix, crushed
1 cup firmly packed grated parmesan
1 stick butter, melted
4 or more green onions, chopped
3 eggs
dash of nutmeg and cayenne pepper
Instructions
Combine all ingredients in a large bowl and mix well. Form into 1 inch balls, bake on ungreased cookie sheets at 350 until golden brown, about 10-15 min. Serve with mustard sauce.
