     Palak Paneer (Spinach Puree with Cheese)

Ingredients
1 tbsp oil
2 cloves garlic (sliced)
1/2 tsp brown cumin seeds
1/2 tsp mustard seeds
1 tbsp onion garlic ginger paste
1 tsp coriander seeds powder
1/2 tsp tumeric powder
1/2 tsp chili powder
salt to taste
 
50 g paneer (can be substituted with feta cheese)
200g fresh spinach leaves - make into a Spinach Puree

Instructions
1. Put pan on heat and add oil 2. When hot add garlic slices and cumin 3. When brown , add powder spices 4. Add ¼ cup water or Garlic onion paste 5. Cook for 2 to 3 minutes until the oil separate 6. Add paneer and cook for 1 minute 7. Remove from heat 8. Mix together with Spinach Puree and Onion Garlic Ginger Paste 9. To serve grate a little paneer on top or crumble some feta cheese on top
Onion Garlic Ginger Paste- Mix 2 tbsp onion, 2 cloves garlic, and 2 inches of grated ginger together in a food processor with a little water until you have a paste.
Spinach Puree- Boil spinach very briefly with salt. Strain and cool down. Purée in the food processor.
