     Bow Ties and Cheese

Ingredients
1 8 ounce package dried medium bow tie pasta
1/4 c. finely chopped onion
2 tsp cooking oil
2 tsp all-purpose flour
1 tsp dry mustard
1/3 c. skim milk
1 c. fat-free cottage cheese
2/3 c. shredded reduced fat cheddar cheese
non-stick cooking spray
 
1 tbsp toasted wheat germ or fine dry bread crumbs
chopped tomato (optional)
sliced green onion (optional)

Instructions
Cook pasta according to package directions, except omit any oil.
In a large saucepan cook onion in hot oil until tender. Stir in the flour and mustard. Add milk all at once. Cook and stir until thickened and bubbly. Stir in the cottage cheese and reduced-fat cheddar cheese. Cook and stir over low heat until cheddar cheese is melted. Stir in the drained pasta.
Spray a 1 1/2 quart casserole with nonstick coating. Spoon pasta mixture into casserole. Bake, covered, in a 350 F oven for 20 minutes. Uncover and sprinkle with wheat germ or bread crumbs. Bake, uncovered, for 10-15 minutes more or until heated through. If desired, garnish with tomato and green onion.
