     Lemon White Chocolate Chip Cookies

1/2 cup organic butter, softened
3/4 cup organic sugar (Florida Crystal's)
1 organic egg
2 teaspoons lemon extract
1 1/4 cups King Arthur organic all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup white chocolate chips

Preheat the oven to 375 degrees. Cream the butter and sugar together until light and fluffy. Add the egg and lemon extract. Stir until blended.
In a large bowl, combine the flour, baking soda and salt. Add the butter mixture to the flour mixture and stir until completely blended.
Stir in the chocolate chips and drop by spoonfuls onto a cookie sheet.
Bake for 8 - 10 minutes until lightly browned. Cool on the cookie sheet for a few minutes then transfer to a wire rack.
