     Sausage and Barley Soup

Ingredients
6 oz. turkey breakfast sausage
2 1/2 C. frozen bell pepper stir-fry
2 C. water
14 1/2 oz. Italian style stewed tomatoes, undrained and chopped
1/4 C. uncooked quick-cooking barley
1 C. coarsely chopped fresh baby spinach
 

Instructions
Heat large saucepan over med-high heat. Coat with cooking spray. Add sausage; cook 3 min. or until browned. Remove from heat.
While sausage cooks, place stir-fry and 2 C. water in blender; process until smooth. Add puree, tomatoes and barley to pan. Bring mixture to boil over high heat; cover, reduce heat to low, and simmer 10 min. Stir in spinach; cook 1 min. or until spinach wilts.
