     Grain & Veggie- Stuffed Portobello Mushrooms

Ingredients
4 (5-in) portobello caps
1 garlic clove, minced
1 C. refrigerated tomato, onion and bell pepper mix
8.5 oz. pouch microwaveable cooked veggie harvest whole grain rice medley
1 C. shredded Italian cheese blend
2 t. Worcestershire sauce
1/4 t. pepper
 

Instructions
Preheat broiler.
Remove gills from mushrooms. Place on foil lined sprayed baking sheet. Broil 4 min.
Heat nonstick skillet coated with spray over medium heat. Add garlic and tomato mixture to pan. Saute 2 min.; remove from heat. Stir in rice, 3/4 C. cheese and Worcestershire sauce.
Turn mushrooms over; sprinkle with pepper. Divide rice evenly among mushrooms; sprinkle evenly 1/4 C. cheese. Broil 3 min. or until cheese melts.
