Mashed Potatoes: push cooked potatoes through a sieveor whip in electric mixer. Add butter cream. Season with salt and pepper, set aside.
Baby Red Potatoes: Cut potatoes in half and hollow out middles - to make room for stuffing. Toss the potatoes in olive oil and roast in oven at 350 for approx. 20 min., until just done, set aside.
To assemble: Using piping bag or small spoon, fill the hollowed-out roasted potatoes with mashed potatoes, top with assorted cheeses and bake in until melted and golden brown. Serve warm.
