Prehear oven to 325. Cut small slits into the pork roast.
Mix together the salt, oregano, thyme and pepper.
Add the slivered garlic and coat them with the spices

Make small slits in the entire pork roast. Insert the garlic slivers into the slits. Rub any remaining spice mixture over the surface of the meat.
Combine the mustard and oil. Brush half of the mixture over the meat.

|
Place the meat on a rack in a roasting pan. Roast uncovered for 1 hour.

|
|
Brush the remaining mustard mixture over the roast. Roast until meat thermometer reaches 170 degrees, about 1 hour.
Total cooking time is approximately 1 hour per pound.
