     Cheese Enchiladas

Ingredients
1 can (15 ounces each) tomato sauce
2/3 cups water
1 T chili powder
1 garlic cloves, minced
1/2 t dried oregano
1/4 t ground cumin
1 pkg of 8 inch flour tortillas warmed
2 cups shredded Monterey Jack cheese
1 and 1/4 cup shredded cheddar cheese divided
 
1/2 cup sour cream ( add more if you want it creamier)
salt and pepper
1 medium onion finely chopped

Instructions
In a large saucepan combine the first 6 ingredients. Bring to a boil and reduce the heat. Simmer uncovered 4-5 min. until thickened.
In a large bowl combine the cheese, sour cream, onion and salt, and pepper.
Spoon 2 tablespoons over each warm tortilla. Put 1/4 to 1/3 cup of the filling down the center. Roll and put seam side down in a greased baking dish. Top with sauce.
Bake at 350 for 20 minutes. Sprinkle with remaining cheese and bake 4-5 minutes until the cheese is melted. Serve with sour cream, lettuce, and black olives.
