     Roasted Asparagus, Potato and Bacon Ragout

1 lb asparagus, trimmed and peeled
1 lb fingerling potatoes, cut in half lengthwise
3 tbsp olive oil
1 tsp salt
1/4 tsp pepper
1 tbsp olive oil
4 oz bacon, cut into 1 inch pieces
1 onion, sliced
1 tsp fresh thyme leaves
1 tbsp chopped fresh tarragon

Separately toss asparagus and potatoes with olive oil, salt and pepper. Roast in a preheated 400 F oven 10 to 15 minutes for asparagus and 30 to 40 minutes for potatoes.
Heat oil in a large deep skillet. Add bacon and cook until crisp. Remove some of the excess fat. Add onion and thyme and cook 10 minutes until browned.
Stir in roasted asparagus and potatoes. Cook 5 minutes just to heat thoroughly. Add salt and pepper to taste and tarragon.
Makes 4 servings
