     Bulgur and Spinach Salad

Ingredients
1 cup boiling low sodium chicken broth
1/2 cup bulgur
1 bunch fresh spinach, washed and stemmed
1 15 oz. can garbanzo beans, rinsed and drained
1 green or red bell pepper, cored and chopped
1 carrot, sliced
1/4 cup chopped red onion
1 clove garlice, minced
1/2 cup red wine or balsamic vinegar
 
2 tsp. dijon mustard
6 tbsp. olive oil
2 tbsp. chopped parsley
fresh ground pepper

Instructions
In a small bowl, combine chicken broth and bulgar. Let stand 1 hour or until broth is absorbed. Tear spinach into bite-sized pieces. In a large bowl, combine bulgar, spinach, beans, bell pepper, carrot, onion and garlic. Toss to mix well.
Mix together vinegar and mustard, then whisk olive oil. Add parsley and mix well. Pour dressing over salad and toss. Season to taste with freshly ground pepper.
