Vegetarian Fish Sauce Recipe

     Vegetarian Fish Sauce

2 C dried shredded seaweed
4 C water
3 cloves garlic, smashed
1 1/2 T peppercorns
1/2 C soy sauce
2 tsp lime juice
2 tsp lemon juice
2 T vinegar
3 tsp sugar
1/4 tsp chili powder

Bring seaweed and water to a boil. Reduce heat and simmer 20 minutes. Add remaining ingredients. Boil, and reduce to medium. Cook 30 minutes.
Cool. Strain and funnel into container. Refrigerate.
Experiment with wakame or other seaweed. Try miso or mushroom soy sauce (with miso added after cooking).
