|
Boil sweet potatoes until soft and mash with vegan
margarine. Meanwhile, parboil carrots.

|
Fry onion in oil until translucent. Add carrot, veg
stock, tomatoes, and thyme. Simmer for 10 minutes.

|
Add lentils (including juice) and simmer for further
10 minutes.
|
|
|
Pour mixture into casserole dish with mashed sweet
potato layered on top. Cook in oven for 20 minutes.
