     Lentil Soup

Preptime   40 mins

1 large onion
2 cloves garlic
2 large carrots
1 stick celery
250g dried red lentils
1 tbsp cumin
1 litre veg stock
Canola/ palm oil

Fry onion in oil until translucent. Add garlic, carrots and celery and fry for a further 2 minutes.
Add lentils and cumin. Fry for further 1 minute.
Add stock and bring to boil. Simmer for 30 minutes.
Blend in a food processor or with a hand blender. Season to taste.
Serving Suggestions
With garlic bread.
