     Baked Egg Custard Pie

Ingredients
1 unbaked 9-inch pastry shell
3 eggs, beaten
1 (12-oz) can evaporated milk
1 cup sugar
3 tbsp all purpose flour
1 tsp vanilla extract
1/2 tsp ground nutmeg
 

Instructions
Bake pastry shell at 400 degrees for 5 minutes; cool. Leave oven on. Combine remaining ingredients in a bowl and mix well with a wire whisk. Pour into pie shell and bake at 400 degrees for 10 minutes; reduce heat to 325 degrees and bake 25-30 minutes longer, or until a knife inserted in center comes out clean.
Let cool to room temperature before serving. Store in refrigerator.
Make 1 9-inch pie.
