     Artichoke Frittata

Ingredients
1 lg onion, choppped
4 oz slice mushrooms
14 oz can artichoke hearts, drained and chopped
7 oz jar roasted red peppers drained and chopped
1 tspn oregano
black pepper
salt
8 eggs
1 cup shredded mozzarella cheese
 
3 tbspns grated parmesan

Instructions
cook onion and mushrooms until tender, add artichokes, peppers, spices
in medium bowl, beat eggs lightly, add mozzarella, pur over vegetables and cook about 5 minutes until set lifting and letting egg run under cooked portion. reduce heat and cook about 10 minutes. preheat broiler, top frittata with parmesan cheese and broil about 4 minutes.
