     Dill Pickles

Ingredients
For Brine
4 quarts Water
1/2 cup salt
100 Medium Cucumbers
Next-
dill
hot red pepper
alum size of bean
 
liquid used to pickle-
1 quart water
1 quart vinegar
2 cups salt
1 cup mustard seed
1 cup horseradish, shaved fine, if desired

Instructions
Make Brine by adding 1/2 cup salt to 4 quarts water. Soak cumcumber in brine overnight and drain in the morning. Wipe dry and pack tight in large jars. On each layer of cucumbers place a thin layer of dill, leaves and seed balls, salk and cherry or grape leaves. Add small piece of hot red pepper, and a piece of alum size of bean to each jar.
Boil together pickling liquid ingredients. Pour into each jar. Do not seal jars tight until fermentation is complete 3 to 4 weeks
