     Peanut Butter Pie

Ingredients
1 1/4 cups of graham cracker crumbs
1/3 cup salted peanuts, finely chopped
1 tbsp. sugar
1/3 cup butter, melted
1 cup sugar
4 1/2 tbsp. cornstarch
1/2 tsp. salt
3 cups milk
3 egg yolks, slightly beaten
 
1/2 cup creamy or chunky peanut butter
1 tsp. vanilla
whipped cream

Instructions
Mix first 3 ingredients well- add butter. Mix until well moistened- Press into a 9 inch pie pan and bake at 375 for 8 minutes or until golden brown. Cool.
Filling- In medium saucepan, combine sugar, cornstarch, and salt- Mix well. Gradually add milk, stirring until the mixture is smooth. Over medium heat bring to boiling; stirring constantly; boil for one minute stirring. Remove from heat. Stir half of hot mixture into egg yolks and mix as you pour. pour back into saucepan.
Return to boiling stirring, boil 1 minute longer. Remove from heat. Stir in peanut butter and vanilla. Pour into pie shell. Refrigerate at least 3 hours. Add whipped cream when serving.
