     Mrs. G Famous Sweet Potato Pie

Ingredients
4 Cups Potatoes
3 tsp Nutmeg
3/4 Cinnamon
3 tbsp Vanilla Extract
3 Eggs 2 1/2 cups sugar
1/2 cup Danish Cream Butter Challenge- melted or soft
1 pie crust
 

Instructions
Bring large pot of peeled sweet potatoes to boil over high heat. Reduce heat to medium. Cook until potatoes are tender, about 30-45 minutes. Drain potatoes and set aside until cool enough to handle. Mash with an electric mixer on medium speed until very smooth (you want to get the strings out). Add nutmeg, cinnamon, vanilla eggs and sugar to potatoes and mix.
Preheat the oven to 400F. Uncover the pie shell and brush the interior with some melted butter. Bake until the pie dough is set and is just beginning to brown, about 15 minutes. If the pie shell puffs, do not prick it.
Fill pie shell with sweet potato mixture. Bake on 350F about 1 ½ hours or bake until a knife inserted in the center of the filling comes out clean. Cool completely on a wire rack. Cover and refrigerate until ready to serve.
