     Roasted Chickpeas

Ingredients
3 tbs olive oil
2 cups cooked or canned chickpeas (as dry as possible)
salt and black pepper
1/4 cup chopped fresh parsley, optional
 

Instructions
Cook chickpeas according to package directions if not using canned chick peas. Preheat oven to 400.
Combine chickpeas and oil in an oil proof skillet or roasting pan and roast for 15 to 20 minutes, shaking the pan occasionally.
