This makes a huge batch because I like to freeze some for use later. I also use this sauce as a base for chili, just add beans and more spices.
I blend about ¾ of the tomatoes in a food processor. I use 3 cans of diced tomatoes as is for a bit of chunk.
Add all spices, (to taste.)
Add diced up veggies and mushrooms.
Add cut up pepperettes to sauce.
Cook ground beef and drain well before adding to sauce.
Let sauce simmer at low heat for several hours, until the veggies are tender.

Garlic bread, crusty rolls, nice side salad.
