Combine the yeast and cup of warm water - when dissolved, (stir in dissolved salt, sugar, and 3 c. water) and 4 c. flour. Beat well until bubbly.
Cover and set aside at room temp. for several hours or overnight.
After the sponge has set, add the beaten eggs, the melted cooled shortening, 1 c sugar, and enough flour to make a soft dough. Turn out onto a floured pastry cloth and knead. Place in a greased bowl and let raise until double in bulk. Knead down and place in the frig. Punch down each day.
When you are ready to use dough, remove portion desired and let it stand for 1 hr at room temp. Make out into rolls and put on greased sheet. Let rise until doubled in bulk. Bake 350 for 15-20 mins. Also, good for cinn. rolls - prepare in the evening, bake in the morning.
