.5 cup uncooked quinoa, soaked 7-24 hours, drained
7/8 c of water
scant tsp broth
.25 tsp ground pepper
1/8 tsp of cayenne
1 c fresh baby corn
.5 can black beans
salt to taste
2 tbsp cilantro
Instructions
Heat oil in medium-sized saucepan over medium
heat. Add onion and garlic and sauté til lightly
browned, about 5 minutes.
Add quinoa, water, bouillon, cumin, and cayenne
pepper. Stir and bring to a boil. Reduce heat, cover
and simmer 15 minutes or until most of the water is
absorbed.
Stir in corn and continue cooking about 5 minutes.
Add black beans and cilantro (if using), and mix
thoroughly. Check salt, top with green onions, and
serve
