     Pogie Pudding

Ingredients
2 cups flour
¾ cup white sugar
3 tsp. baking powder
½ cup margarine
Pinch of salt
 

Instructions
Mix together and add 1 cup milk. Put in greased 9x9 baking dish.
For Sauce - Mix together ¾ cup hot water, 1 cup brown sugar, 1 tsp vanilla, ¼ cup butter or margarine. Mix together until sugar and butter is dissolved. Add ½ cup shredded coconut or sliced toasted almonds (optional)and pour mixture on top of cake. The cake will rise during cooking, the sauce will thicken and be on the bottom of the cake.
Bake at 325f for 30 minutes or until cake is done.
Serving Suggestions
Whipped cream or ice cream on top when pudding is still warm.
