     Classic Beef Stew

Ingredients
2 lbs beef stew meat - 1 inch cubes
1 to 2 tablespoons veg oil
1 1/2 cup chopped onion
1 can 14.5 oz diced tomatoes
1 can 10.5 oz condensed beef broth
3 tablesoops quick cooking tapioca
1 garlic clove
1 tablespoon dried parsley flakes
1 teaspoon salt
 
1/4 teaspoon pepper
1 bay leaf
6 medium carrots cut in 2 in pieces
3 medium potatoes peeled and cut in 2 in pieces
1 cup sliced celery 1 in pieces

Instructions
In dutch oven brown the beef half at a time in oil. Drain and return all meat to the pan. Add onion tomatoes beef broth tapioca garlic parsley salt pepper and bay leaf. Bring to boil. Remove from heat.
Cover and bake at 350 for 1.5 hours
Stir in carrots potatoes and celery. Bake 1 hour longer or until meat and vegetables are tender. Remove bay leaf.
