     Chicken and Summer Vegetable Tostadas

Ingredients
1 t ground cumin
1/4 t salt
1/4 t pepper
2 t canola oil
12 oz chicken breast tenders
1 cup chopped red onion
1 cup corn kernels
1 cup chopped zucchini
1/2 cup green salsa
 
3 T chopped cilantro divided
4 8 in flour torilllas
1 cup shredded monteerey Jack cheese

Instructions
Combine first 3 ing, stirring well. Heat oil in lg skllet over med high heat. Sprinkle the spice mixture evenly over the chicken. Add chicken to pan and saute for 3 minutes. Add onion,corn and zucchini to pan and saute for 2 min or until liquid almost evaporates, stirring frequentsly
Working with 2 tortillas at a time, arrange tortillas in a single layer on a baking sheeet and lightly coast tortillas with cooking spray. kBBroil 3 min or until lightly browned. Spoon about 3/4 cup chicken mixture in the center of each tortilla and sprinkle each with 1/4 cup cheese. Broil an additional 2 min or until cheese melts. Repeat with remaining torts, chicek mixture and cheese. Sprinkle ea serving with about 3/4 t of remaining cilantro.
