     Spinach & Mushrooms

Ingredients
1 TB Butter
1 TB olive oil
1 garlic clove
salt
8 oz mushrooms
1 tsp lemon juice
1/2 cup fresh leeks (white only) thinly sliced
2 cups spinach
1/4 cup grated parmesan cheese
 
1 TB cream
1/4 cup chicken or vegetable broth

Instructions
Put butter and olive oil in skillet. Add garlic clove and a little salt. Cook for 1 to 2 minutes. Add mushrooms and cook for 3 to 4 minutes. Add leeks and lemon juice. Cook till leeks are soft and translucent. Add 2 cups spinach. Immediately stir in cream and broth. Simmer to reduce a little. Add parmesan cheese and serve.
