     Almond Cake

Ingredients
2 sticks unsalted butter, room temp
1 cup sour cream, room temp
1 tsp baking soda
2 c all-purpose flour
1/2 tsp salt
1.1/2 c sugar
1 7 oz. tube almond paste in small pieces
4 egg yolks, room temp
1 tsp. almond extract (real!)
 

Instructions
Preheat oven to 350; butter bottom of 9-in springform pan. Line the sides and bottom with parchment paper and butter the paper. In a small bowl mix the sour cream and baking soda. In another bowl mix the flour and salt.
In electric mixer (paddle attachment), beat sugar and eggs until fluffy. Add almond paste in little bits and beat on medium speed for 8 minutes. Add egg yolks one at a time. Add almond extract and sour cream mixture, then reduce mix speed to low and slowly add flour mixture until just combined. Fold a few times with a spatula to take care of any extra floury bits.
Scrape batter into prepared pan and spread even. Bake 1 hour (it's done when the top springs back and the sides shrink in)
Serving Suggestions
Powdered sugar on top and/or berries and/or fresh whipped cream
