     Ellen's Marinara Sauce from scratch

Ingredients
2-3 T. chopped garlic
3 T. olive oil
8 c. chopped tomatoes (fresh or canned)
1 c. chopped onions
1/2 c. chopped fresh parsley
1 t. oregano
1 t. crushed red pepper
2 T. sugar
1/2 T Italian seasoning
 
1/8 c. chopped fresh sweet basil
pinch of thyme
pinch of rosemary
1-2 t. salt (to taste)
1-2 t. pepper (to taste)

Instructions
Lightly saute onions in olive oil for a few min, until they start to get soft.
Add garlic and saute another minute. DO NOT ALLOW TO BROWN!
Add tomatoes and bring to a boil, the turn heat to low.
Add the rest of the ingredients, cover and let simmer for an hour, stirring occasionally. Taste and adjust seasonings as needed. For a rustic sauce, use as is. Allow to cool and blend for a smooth sauce.
Serving Suggestions
You can change the flavor up putting whole tomatoes and garlic cloves on a cookie sheet, drizzle with olive oil, turn to coat and oven roasting!
