Lightly saute onions in olive oil for a few min, until they start to get soft.

Add garlic and saute another minute. DO NOT ALLOW TO BROWN!
|

Add tomatoes and bring to a boil, the turn heat to low.
|
|
|
Add the rest of the ingredients, cover and let simmer for an hour, stirring occasionally.
Taste and adjust seasonings as needed.
For a rustic sauce, use as is.
Allow to cool and blend for a smooth sauce.

You can change the flavor up putting whole tomatoes and garlic cloves on a cookie sheet, drizzle with olive oil, turn to coat and oven roasting!
