     Filet Mignon with Blue Cheese Butter

Ingredients
5 ounce filet mignon per person
salt and pepper
olive oil
For Butter-
1/2 c. butter at room temp.
1 c. crumbled blue cheese
4 T. minced chives
2 T lemon juice
 
Zest of 1 lemon
salt and pepper to taste

Instructions
Season filets with salt and pepper. Heat a large cast iron skillet and add some olive oil. When hot, seat the steaks and cook until desired doneness.
For butter- Mix all ingredients together. Spoon out in a row on parchment paper and roll into a log, wrapping with the paper. Chill.
Serve with Madeira Sauce (recipe in sauces section)
