     Oat Waffles

5.1/2 oz rolled oats
4 oz whole wheat flour
3 tbsp brown sugar
1 tsp baking powder
1 tsp salt
1/2 tsp soda
3 eggs, beaten
2 oz butter, melted
16 oz buttermilk, room temp
splash of vanilla

Preheat waffle iron. Toast oats on stovetop until slightly brown and delicious smelling. Grind oats in a food processor until they reach flour-consistency.
Whisk together the oat flour, wheat flour, sugar, powder, salt, and soda in a bowl. Whisk eggs and butter together in a separate bowl, and then add buttermilk and vanilla. Add wet ingredients to dry and stir until combined. Let batter rest for 5 minutes or fridge overnight.
Cook waffles in iron per usual.
