     Salmon Patties

Ingredients
1 lb can salmon (2 cups)
1 egg, beaten
2 Tbl grated onion
2 Tbl flour
2 Tbl lemon juice
1 tsp Worchestershire sauce
1/4 cup dry potato flakes
1/2 cup seasoned dry bread crumbs
2 Tbl margarine
 

Instructions
Combine all ingredients into 12 small patties. Roll patties in 1/2 cup bread crumbs. In a large heavy skillet over low heat, melt 2 tablespoons of butter; add patties. Fry patties slowly on one side; add remaining butter, turn patties and fry until brown on the other side.
Serving Suggestions
Serve with Lemon Sauce, tartar sauce, or seafood cocktail sauce, garnished with lemon wedges.
