     Breakfast Tacos

Ingredients
1/2 Zuchinni , cut into chunks
1/2 Onion (red or white), cut into chunks
1/2 Bell Pepper (any color), cut into chunks
1/4 can Cannelini Beans (Pinto, Black, etc.)
Handful of mushrooms, diced
Vegetarian Chorizo
Vegan Cheese (Follow your heart Mozarella is my fav)
Green Sauce (recipe found in cookbook)
Salt and Pepper to taste
 
Corn Tortillas

Instructions
Preheat skillet to medium heat with oil. Add onion and bell pepper and a pinch of salt. Let the mixture sweat instead of brown. Add Zuchinni and beans and let cook until slightly brown. Add mushrooms and a pinch more salt and soyrizo and turn heat down to cook thouroughly. (Approx. 5 min)
Put corn tortillas in the oven on 350 right on rak and let warm. Keep an eye as you only want the tortillas pliable, not crispy.
When veggie mixture is lookin' good, add 1/2 cup to 1 cut of green sauce and vegan cheese. (you can use real cheese if you want, i suppose). Stir mixture up and let warm. Remove tortillas from the oven and set them on the counter, folded. You might need to fold them and stack them with a light weight on top to keep them folded.
Fill with mixture, add a squeeze of lime to the top, your favorite hot sauce and enjoy!
Serving Suggestions
Serve alongside Sweet Potato and Carrot Hashbrowns
