Preheat bbq grill to 400 degrees. If you dont have a bbq, preheat oven to the same temperature. I highly recommend using a bbq to give the smoky taste this sauce needs.

Wash tomatillos as they are very sticky. leave them whole. Cut the onion and limes in half and cut the pointy top of the garlic bulb off. Put all veggies in a large mixting bowl and toss in oil, salt and pepper. Arrange everything on the grill except peppers and limes. Leave those til the veggies are about halfway done. All veggies should take about 15-20 mins to cook. Put peppers on the top rack to cook.

Tomatillos are done when they start to burst. Everything else should have a nice char to it. Pull off the veggies and return to the same bowl with the oil mixture. Add everything to a blender, including vingear. Add 1/4 tsp each salt and pepper. You dont want to over salt it now. It is hard to gauge how salty it is when it is hot.

After everything is mixed, put blender in fridge and let it cool down for a few hours. Afterwards. taste it and you can add more salt and pepper, lime or vinegar to taste. simply re-mix afterwards.
